General Tso’s chicken with broccoli:
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup cornstarch
- 2 large eggs, beaten
- 2 tablespoons vegetable oil
- 1 head broccoli, cut into florets
- 1/2 cup low-sodium chicken broth
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes (optional)
- 1 green onion, thinly sliced
Instructions:
- Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and set aside.
- In a shallow dish, mix together the cornstarch and beaten eggs. Dip the chicken pieces into the mixture, making sure to coat them evenly.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook for about 3-4 minutes, or until they are golden brown and cooked through.
- Transfer the chicken to the prepared baking sheet and place it in the oven to keep it warm.
- In the same skillet or wok, add the broccoli florets and stir-fry for about 2-3 minutes, or until they are tender.
- In a small bowl, mix together the chicken broth, hoisin sauce, soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes (if using). Pour the sauce into the skillet or wok and bring it to a boil.
- Add the cooked chicken pieces to the skillet or wok and toss them in the sauce to coat them evenly.
- Serve the General Tso’s chicken and broccoli over a bed of rice, garnished with sliced green onions.
